Fried Sweets Like Howard's

Tropical Fritter Snacks

Claudia Williams wanted to duplicate the Hawaiian PineappleFritters sold at Howard's Donuts. Since I've not been lucky enoughto sample them, I couldn't give any hints about possibleingredients.

Barb Crane used her Internet savvy to check Howard's Facebookpage and learn they contain coconut and nuts. Then she searchedRecipeZaar (yummly.com) and found one recipe that fit.

The Internet also came to the rescue for Roy Gaia of OliveBranch, who called to ask why he couldn't locate Penrose PickledSausages anymore. The ConAgra web site listed four varieties - BigMama, Tijuana Mama and two sizes called Firecracker - but the storelocator found only one location within 30 miles of Olive Branch thatsells all four: Super Dollar at 184 Fuller St. in Byhalia. A numberof grocers in Memphis and West Memphis sell Big Mama and TijuanaMama, including Piggly Wiggly, Superlo, Stepherson's and GeneStimson's Big Star.

A new request:

Susie Melton wants a recipe from Oakhaven High School's lunchroom. The dish had elbow macaroni, sauce and a layer of cheese ontop, like chili mac without the chili taste.

Tropical Fritter Snacks

1/4 cup sugar

1 tbsp. cinnamon

1 can (20 oz.) crushed pineapple

1/4 cup shredded coconut, toasted

1/4 cup chopped macadamia nuts

3 cups all-purpose flour

1/2 cup sugar

2 tsp. baking soda

1 tsp. salt

Mix 1/4 cup sugar with cinnamon and put aside. This will besprinkled on top of the fritters after they are fried.

Heat oil to about 350 degrees Fahrenheit. While oil is heating,in a medium bowl, mix pineapple (don't drain), coconut, macadamianuts, flour, 1/2 cup sugar, baking soda and salt. Dough will bethick.

Using a tablespoon, drop dough into oil. Fry until golden (about2 minutes per side) Place on paper towel to drain and sprinkle withcinnamon-sugar. Serves 10.

These are best served warm. If serving cold, make sure tosprinkle the cinnamon-sugar on while they are still warm. Could alsobe sprinkled with confectioners' sugar.
